So far I’ve been handling the e-diet well. Day 3 and 4 were rough, riddled with carb cravings, a constant headache and a very funny temper-tantrum at dinner on Wednesday night. Gilday said that he caught a glimpse of what my parents went through when I was a child at dinner and refused to eat what they gave me. It was that bad.
I was able to fight off the gluten beast throughout the weekend, with ample fresh veggies, steak and some delicious flounder that we cooked on the grill. Topped with freshly picked strawberries with a gluten free cookie for dessert and I think we ate pretty well.
Did you know that gluten (or wheat) is in just about everything? I was completely amazed that it’s even in soy-sauce. I have a new appreciation and respect for what Megan has to go though each day when planning out her & her families meals. Major prop’s out to her!
I have to admit though, I feel so much better. Perhaps my body just needed a reset but I feel like I’ve taken years off my life and its only day 7. Imagine once I get through all the steps to find out what the real problem is? I’ll be able to conquer the world! Or, at least a small part of it.
